An article called "Life and death: metabolic rate, membrane composition and life span of animals" from Hulbert et al. touches on this subject, I encourage anyone to skim through it.
One passage I want to highlight:
"a membrane bilayer consisting solely of MUFA will have an unsaturation index of 100 and a peroxidation index of 2.5, while a membrane bilayer consisting of 95% SFA and 5% DHA will have an unsaturation index of 30 and a peroxidation index of 40. This means that although the 5% DHA-containing membrane has only 30% the density of double bonds of the monounsaturated bilayer, it is 16
times more susceptible to peroxidative damage."

Danny Roddy comments on Carbon Dioxide: The Real Reason Safe Starches Are a Joke

@Celine,

The comments on this site are being a bit wacky. It's a bit confusing because in most of his articles he deprecates "unsaturated" fats, but usually makes no distinction between PUFA and MUFA.

MUFA are usually found in conjunction with saturated fats in nearly all animal fats, like butter and cream for example. If one wanted to truly avoid all MUFA as well as PUFA, one would pretty much have to eat coconut oil as the exclusive source of fats in the diet.

But Ray seems to endorse butter as a healthy source of fat. Can anyone help clarify this for me?

celine comments on Carbon Dioxide: The Real Reason Safe Starches Are a Joke

Author, Fruit definitely has its mirits, I don’t dispute that.
diets as low as 15% fructose (70grams/day for humans on 2000 cal) have been used to induce impaired glucose tolerance in rats, it just takes a little longer, 1year.
http://www.ncbi.nlm.nih.gov/pubmed/7007594
you could argue that these researches didn’t controll for pufa and that 4% lard-4%corn oil isn’t low enough for you, fine, I don’t go that way.

I've trouble coming to grips with the 'keep pufa down and swap it with OJ'mantra, how would you accommodate Standhope's feeding trials?

Violeta comments on Carbon Dioxide: The Real Reason Safe Starches Are a Joke

@Lilly, I have those symptoms, too. The overgrowth of bacteria in the small intestines is there because of leftovers not being digested or moved along. So instead of killing the bacteria, it seems like it would help more to digest what they are living on. I started taking a good (expensive) proteolytic enzyme and it seems to be helping a lot. I read that SIBO can be the cause of a lot of issues in other places in the body, and it does seem like the enzymes are helping with my other problems, too.
I also quit all starches, because I read that that's what the bacteria feed on. I replaced starch in my diet with sugar, which is what most people say feed the bacteria, but I'm doing better on the sugar than the starch because the sugar is easily digested.
