I'm just wondering how much of the nutritional value you lose by warming the carrots over some coconut oil on a hot plate. We're talking about a very low temperature, not fully cooking them. Just making them warm and soft...
You'll lose the desired effect if the carrots are cooked.
It would be fine to blend a carrot up and eat everything (juice and pulp), right?

Hi Danny, do you have any data (even anectodtal) to support the claim that this concoction will actually reduce estrogen et al?
I've tried to dig through the references on Peat's website, but can't seem to find any that specically mention this carrot salad.

Two hundred grams of raw carrot eaten at breakfast each day for 3 weeks significantly reduced serum cholesterol by 11%, increased fecal bile acid and fat excretion by 50%, and modestly increased stool weight by 25%. This suggests an associated change in bacterial flora or metabolism. The changes in serum cholesterol, fecal bile acids, and fat persisted 3 weeks after stopping treatment.
I get lots of anecdotal emails about the carrot helping with digestive issues.
